
Second, I started contracting part time at Gazillion Entertainment (which I what I'm going to blame for my lack of sketch updates!). I really like the work I'm doing, none of which I can speak about... but I like it a lot and that's really what matters the most.
A great part about part-time work is it still affords me the time to work on all my crazy side projects. I have a couple I'm juggling but one that I'm most into right now is a book that I'm writing. Every few days I try to sit down and write a few paragraphs. It's still in a very fledgling state but I like that it gives me a chance to unleash my creative juices and go wild (in book form).
Now for the most interesting part... FOOD! You laugh, but since I graduated from grad school I've had so much time to cook delicious meals. No more ramen noodles, cold pizza, or late night chinese take out for me... Ok, that's partly a lie, ramen noodles, cold pizza, and chinese take-out will probably still be staples in my diet for a few more years. Whatever, here are some of my culinary hijinxs:
After months of not leaving the house early enough to catch the Saturday Farmer's Market, I finally made it there. Here's what I scored on my first trip: fresh cut flowers (I think they are ranoculus'), organic strawberries (favorite!), thyme plant, oregano plant, jalapeno plant, grapfruit, organic asparagus, tomatos, raisins, honey sticks (!!! these were my favorite thing when i was little), honey, hot pies (spinach/feta and thai curry chicken) and some butternut squash soup. I know it's dorky, but all that yummy food really makes me happy.
Then, the next morning I got to eat a delicious breakfast (something I rarely do, I know, shame!) of grapefruit with a bowl of yogurt/granola/strawberries. It was a really awesome weekend.
Inspired, I made veggie lasagna that week for Meatless Monday (is anyone else trying this?). Now, I don't know if you've ever made lasagna before... but I haven't. It took me 6 hours to put this bad boy together. I think cutting and stewing the veggies took the longest, although the bake time of 1.5 hours probably didn't help. Either way, it was very delicious and I'm glad I made it!
Here it is before I put it in the oven topped with some fresh green onion. I totally mismanaged my time on making this and it was already 9:30pm by the time I go it all prepped and assembled (seriously, lasagna takes a long time! Lesson learned). I put it in the oven and ended up making a different dish for our extremely late dinner. And if things couldn't get any more hectic, all the juices overflowed the lasagna dish in the oven and made a mess so I didn't take any pictures of the end result due to grumpiness and tiredness. Even with all the stress, it was super, super delicious!
